Green Veggie Mix Up
˝ cup frozen spinach, thawed
˝ cup peas
˝ cup broccoli, cut
˝ cup green beans
1 zucchini, sliced
1 asparagus, end removed and sliced
1 Tbsp. onion, chopped
1 tsp. olive oil
1 cup organic low-sodium chicken stock
1 cup water
In a pan sauté onion until slightly soft. Add zucchini and
asparagus. Continue for 4 minutes. Add the rest of the ingredients
and simmer covered, but slightly cracked open, for 20 minutes.
Separate liquid and place food into a food processor. Begin to
blend, adding liquid little by little until the preferred
consistency is met.
