Garden Harvest
½ cup green beans
½ cup baby carrots
¼ cup baby tomatoes, diced
¼ cup low sodium chicken stock
1 oregano leaf, finely chopped
Dash of pepper
Steam carrots and green beans for 20 minutes or until tender.
Meanwhile in a small pot simmer chicken stock with tomatoes, salt,
pepper and oregano for 10 minutes.
Pop all ingredients into a food processor and whirl away. For extra
creaminess add more chicken stock. For more density, add a touch of
rice cereal.
