Pork and Couscous Dinner
1 pork chop 1” thick, cubed
½ sweet apple, peeled and sliced
Pinch of pepper
¼ tsp. cinnamon
3 cups organic low-sodium chicken stock
1 tsp. olive oil
1 Tbsp. onion, chopped
1/3 cup dry couscous
½ cup organic low-sodium chicken stock
Heat a medium pan and sauté onions until soft. Add pork and stir fry
until beginning to brown. Add apples, cinnamon, pepper and chicken
stock. Bring to a low boil and simmer covered for 25 minutes.
In a small pot bring, ½ cup chicken stock and olive oil to a boil.
Turn off heat and add coucous. Let sit covered for 6 minutes.
Separate pork and apple mixture from liquid and place food into
processor with couscous. Blend, adding liquid little by little until
a smooth texture is achieved.
