Italian Sausage with Garbanzo
Beans and Spinach
¼ cup. un-spicy Italian sausage, casings removed and chopped
½ can chickpeas, rinsed and drained
1 Tbsp. onion, chopped
¼ cup red bell pepper, chopped
1 bay leaf
5 oz. fresh spinach
¾ cup organic low-sodium chicken stock
¾ cup water
1 tsp. olive oil
In pan sauté onions in olive oil until soft. Add sausage and brown.
Add the rest of the ingredients and simmer covered for 15 minutes.
Separate food from liquid and place into a food processor. Blend
adding liquid little by little until the preferred consistency is
achieved.
