
Squashy Quinoa
½ cup zucchini, diced
½ cup yellow squash, diced
½ cup quinoa
1 cup organic low-sodium chicken stock
1 ½ cup water
¼ cup boiled chicken stock if needed
Place all ingredients into a small pot and cover. Bring to a boil
and reduce. Simmer for 25 minutes.
Pop mixture into a blender and begin to process adding boiled
chicken stock little by little until the preferred consistency is
met.
