
Sweet Potato Quinoa
1 sweet potato, peeled and diced
½ cup quinoa
1 ½ cup organic low-sodium chicken stock
1 ½ cup water
¼ tsp. cinnamon
¼ tsp. fresh parsley, finely chopped
½ boiled chicken stock, if needed
Place sweet potato, quinoa, water, and chicken stock in pot. Cover
and bring to boil. Reduce heat and simmer for 25 minutes.
Separate mixture from liquid and place in blender. Begin to process
adding additional chicken stock if needed to achieve preferred
consistency.
