
Mint Quinoa and Avocado
1 avocado
¼ cup quinoa
½ cup water
½ cup low sodium chicken stock
¼ tsp fresh mint, finely chopped
Cook quinoa in water and chicken stock for 25 minutes over medium
heat with pot covered. Scrap avocado and place in blender. Add
cooked quinoa and mint. Blend until smooth. Add boiled chicken stock
if needed.
