Grilled Duck Kebabs
1 cup duck breast or thighs, rinsed and cubed
¾ red pepper, cut into 1 inch pieces
¼ onion, cubed
¾ organic low-sodium chicken stock
Pinch pepper
¼ tsp. cinnamon
¼ tsp. thyme, finely minced
¼ paprika
1 Tbsp. olive oil
Soak wooden skewers in water. In boil mix olive oil together with
all herbs and spices. Add duck pieces and marinate for 2 hours.
Pierce duck with skewers and alternate with pepper pieces and onion.
Grill for about 30 minutes or until chicken is cooked through.
Remove food from skewers and place in blender. While pulsing add
chicken broth little by little until the correct consistency is
achieved.
