Sweet Potato and Duck
½ cup duck, cooked and diced
1 medium sweet potato, peeled and diced
1 Tsp. onion, diced
2 tsp. olive oil
¾ cup organic low-sodium chicken broth
Dash of cinnamon
In a pan, sauté onions in olive oil until soft. Add sweet potato.
Saute until beginning to brown. Add chicken broth and simmer covered
for 15 minutes or until potatoes at fork tender.
Place mixture, duck pieces and cinnamon in food processor and blend
until smooth. For extra creaminess, add boiled chicken broth
teaspoon by teaspoon until preferred texture is achieved. To
thicken, add dry rice cereal little by little.
