Duck Cacciatore
1 duck breast
Pinch of pepper
¼ cup flour for dredging
1 Tbsp. olive oil
¼ onion, finely chopped
½ cup bell pepper
4 baby tomatoes, halved
1 cup organic low-sodium chicken stock
1 cup water
1 oregano leaves
1 basil leaves
Sprinkle duck with pepper. Dredge duck in flour lightly.
In pan, heat olive oil over medium heat. Fry duck for 5 minutes each
side. Remove from pan. Now sauté onions and bell pepper for 3-4
minutes. Add chicken stock, water, tomatoes and herbs. Simmer for 10
minutes covered on low heat.
Cut duck into 1 inch pieces. Add to pan and simmer for additional 5
minutes.
Place drained mixture into food processor. Pulse mixture adding
chicken stock little by little until correct consistency has been
achieved.
