
1 duck breast, ground or finely
chopped
1 sweet apple, peeled and chopped
4 baby carrots, chopped
¼ tsp. cinnamon
1 Tbsp. onion, chopped
Pinch of pepper
1 ½ cup organic low-sodium chicken stock
1 ½ cup water
½ cup dry rice, rinsed
In a pan sauté onions in olive oil until soft. Add duck and stir fry
for few minutes until done. Add cinnamon, carrots, pepper, apples,
chicken stock and water. Simmer covered for 15 minutes.
Separate from liquid and pop mixture into food processor. Start
blending adding liquid little by little until the correct
consistency is met.
