3 tomatoes
1 Tbsp. olive oil
1 tsp. parsley, finely chopped
1 tsp. basil, finely chopped
½ ground beef
½ ground pork
2 Tbsp. Italian bread crumbs
Pinch of pepper
1 cup organic low-sodium chicken stock
Preheat oven to 400 degrees F. You may choose to use a small toaster
oven.
In a bowl mix beef, pork, bread crumbs, herbs and seasonings. Scoop
out tomato centers.
Split filling between the three tomatoes. Place in a glass baking
dish. Bake for 30-40 minutes or until bubbling and tender.
