Meat Loaf
1 Tbsp. Italian bread crumbs
Pinch of pepper
Pinch of paprika
¼ onion, chopped
4 baby carrots, grated
½ cup butternut squash or pumpkin puree
½ cup ground sirloin
4 baby tomatoes, finely chopped
¼ cup organic low-sodium chicken stock
Combine all ingredients in a bowl. Press into a small glass dish
that has been coated with olive oil. Bake at 325 degrees F for about
45 minutes or until thermometer reaches 160 degrees.
Place meatloaf in food processor and pulse adding additional boiled
chicken stock to smooth out and obtain the correct consistency.
