Taro and Beef
1 ˝ cups taro root, washed, peeled and diced
˝ cup stew meat, ground
˝ tsp. soy sauce
2 button mushrooms, cleaned and finely chopped
1 cup organic low sodium chicken stock
1 cup water
1 tsp. olive oil
In a pan heat oil and sauté ground meat and mushrooms until cooked.
Add taro root, chicken stock and water. Bring to a boil and simmer
for 25 minutes.
Separate mixture from liquid and place into a food processor with
soy sauce. Begin to blend adding liquid little by little until the
correct consistency is met.
